2 eggs plus 1 extra yolk
1 1/2 to 1 3/4 c. milk
1/2 c. granulated sugar
1 tsp. vanilla extract
Pinch of salt
4 T. butter
12 slices of white bread
{I prefer Texas Toast-regular bread gets too soggy]

Directions:
1. Whisk eggs, yolk, milk, ¼ c. sugar, vanilla & salt in a bowl. Heat a large skillet over medium-high heat and add 1 T. butter. When the bubbles calm down, sprinkle 1½ - 2 tsp. sugar and melt to caramelize.

2. Dunk slice of bread in bowl; place in skillet. Repeat with two more slices. Cook until undersides are deep golden. Sprinkle each slice with ½ tsp sugar; flip and cook until golden. [keep warm while cooking the rest]

3. Wipe out pan with paper towel; repeat steps with remaining bread.
