1 pheasant
2 T. soy sauce
1 T. ketchup
1/2 c. broken walnut halves
2 - 4 T. olive oil
1/2 green bell pepper
1/2 red bell pepper
1/2 yellow bell pepper
3/4 c. onion, chopped
1 T. cornstarch
1/2 t. each of salt and sugar
2 T. cooking sherry
seasoned salt and pepper to taste
1 c. sliced mushrooms

Directions:

Rinse pheasant and remove bones, cut into bite size pieces. Combine soy sauce, cornstarch, ketchup, salt, sugar, seasoned salt, pepper and cooking sherry in shallow pan. Toss pheasant in mixture and refrigerate covered in refrigerator for at least 3 hours. Saute walnuts in oil in wok or skillet, drain, remove from wok. Then stir fry vegetables and remove from pan; then stir fry meat until golden brown, adding more oil as needed. Add vegetables and walnuts and thoroughly mix and heat through. Serve over hot rice.
