1 white cake mix (or make a white cake from scratch)

2 coconuts

1 carton of heavy whipping cream

Make a white cake according to your own recipe or from a box

Take an ice pick or a screw driver and an hammer and puncture holes in the coconut where the "bowling ball" indentations are on the coconut--turn upside down and drain liquid out

Take the hammer and smash the coconuts into small pieces

Take a knife and take off the hard shell
Peel the brown thin skin from the coconut
Wash the coconut and pat dry

Grind the coconut

Whip the heavy cream until fluffy, add a small amount of powdered sugar to sweeten and a drop of vanilla

Spread the whip cream on the cake (if make layer cake -- on the first layer)

Add a layer of coconut

If making a layer cake, add whip cream and coconut on the sides of the cake

Fresh coconut is a lot of work -- but SO WORTH IT

My mother ALWAYS used a cake mix
She always made it as a 2 layer cake
I've made it as a 3 layer cake, as a sheet cake and as cup cakes.
I believe the easiest way is as a sheet cake, but it is more impressive as a layer cake
This cake has been a Christmas staple for as long as I can remember and I have kept up the tradition with my own family
Mother said this cake came from the Gaither side of the family - I think her Dad

When we were growing up, a piece of coconut cake and one of those small bottled cokes was left out for Santa Claus. He must have loved it, cause there was never any left on the plate on Christmas morning :)
