3/4 c sifted confectioner's sugar
1/2 c creamy peanut butter
1 9 in pastry shell baked and cooled
1/2 c and 6 T granulated sugar, divided
3 T cornstarch
1/2 tsp salt
3 egg yolks, slightly beaten
2 1/2 c milk
2 tsp vanilla extract
3 egg whites

Directions:
Directions:
Combine confectioner's sugar and peanut butter until mixture resembles coarse crumbs. Reserve 3 T of the crumb mixture; sprinkle remaining mixture over bottom of baked pastry shell.

In a medium saucepan, mix together the 1/2 c granulated sugar, cornstarch, and salt. Combine egg yolks and milk; Stir into granulated sugar mixture until well blended. Cook over medium heat, stirring constantly until mixture comes to a boil. Continue stirring and cook 1 minute longer. Remove from heat. Stir in vanilla. Cool to room temperature. Pour into prepared pastry shell.

Heat oven to 425ºF.Beat egg whites at medium speed with electric mixer about 1 minute or until soft peaks form. Gradually add the 6 T of sugar, 1 T at a time, beating in mixer at high speed about 4 minutes or until stiff peaks form. Spread beaten egg whites over cooled filling, sealing to edges of pastry.

Top with reserved 3 T of peanut butter mixture and bake about 5 minutes or until meringue is lightly browned.
