Aunt Patty's Potato Soup Recipe

4 large red potatoes, peeled and cubed
2 cups milk
4 cups of water
1/3 cup flour
1/3 c diced onion
5 slices American cheese
8 strips of bacon
Salt and pepper to taste

Directions:
Directions:
Put in a large (5 qt) pan and add water, onion and 2 tsp salt. Bring to a boil over medium heat and cook for 20-30 minutes.
Fry the bacon and drain on paper towel.
Put the milk and flour in a blender and blend well (or mix with a fork or whisk instead of blender).
When potatoes are tender, add milk slowly to potatoes and stir. Turn heat down to low and let cook 10 more minutes, stirring occasionally.
Crumble up 7 strips of bacon and eat the other one (or allow hubby to come up to you while cooking to pretend to hug you and steal one strip of bacon... because you know they will do that anyway).
Add the bacon pieces to potato soup and stir again. Add more salt and pepper if desired.
Tear up cheese and add to soup. Once the cheese is melted ladle up soup into bowls and enjoy!

If you are short on milk you can use Pet milk. (I used 1 can plus milk to make 2 cups). Velveeta cheese works well also. If you want to use ham pieces instead of bacon that works, too and it's less messy

I am one of those cooks who doesn’t really measure when I am preparing my own dish. I do follow recipes in cookbooks though.

Years ago my sister told me how she made potato soup. I've made it over the years by just doing it without a recipe. After telling my niece about the soup last year I had to come up with a real recipe for it. Here it is. As you can read, there are ways to vary what you do. Today I even added some diced celery... just because I had it on hand. Actually, that's why I made the soup today: because I had everything it took on hand already.
