Crust
2 cup all purpose flour,dip with sifter
double pinch of salt
1 cup shortening (I use 1/2 C butter crisco & 1/2 C lard)
1 egg (beaten)
few drops vanilla
Filling
1 lb box of raisins
1 pinch of salt
1/3 cup sugar
2 T corn starch
1/3 C white sugar
1 egg
1 C milk
2 tsp lemon juice

Cook raisins in 2 qt saucepan with enough water to cover 3/4 inch. Add pinch of salt and 1/3 cup of sugar. Cook while you do the crust. After they cook some, make sure you're leaving 1 to 2 cups of more of juice off of the raisins to use later.
In bowl mix 2 T corn starch and 1/3 cup of sugar. Mix in 1 egg and 1 cup milk. Use a little of the milk to blend corn starch and sugar. The egg goes in better.
Add rest of the milk. Set raisins off of the heat: add 2 tsp lemon juice, then slowly add sauce to raisins. Set back on burner to thicken. When thickened slightly, put in crust.Dot with butter. Put on top crust and bake at 400 degrees till lightly browned.

Crust:
In a mixing bowl add shortening. In the same measuring cup, break 1 egg in the cup, beat with fork, fill to 1/2 full with ice water. Add a few drops of vanilla.
Now sift flour mixture over shortening, and use pastry blender to mix. Now put egg, and water over shortening. Turn into floured board and divide to make 4 crusts. Just before putting in oven brush tops with water and sprinkle with sugar.

This is a favorite pie everywhere I go. I had one man say it make him well when he was sick- Ha!
There was never a real recipe for this but we tried to put one together.
This is a favorite of both the Lane and Atkins families.
