1 cup buttermilk
2 tablespoons melted butter or oil
1 egg
1 cup all-purpose flour
1 teaspoon baking soda
2 tablespoons sugar
1/2 teaspoon salt

Directions:
Directions:
The buttermilk provides the acid needed to activate the baking soda. (No baking powder needed for this recipe)
Beat liquid ingredients together. Thoroughly mix dry ingrediends and add them to liquid, stirring only long enough to moisten flour. Ladle enough batter onto a hot griddle to make pancakes about 4 inches in diameter.
These are really good pancakes.

This recipe was in the Greensboro Daily News January 3, 1985. Milk at Krogers was $1.49 cents
a gallon, grade A large eggs, $ .59 cents a dozen,
regular and diet coke was $1.09 a liter. Holly Farm
chicken was $ .99 cents a pound, and onions were $.19 cents a pound
