2 cups sifted all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
2 tsp. cream of tartar
1/4 cup unsalted butter
1/4 cup shortening
1 cup sugar
1 1/2 tsp. lemon juice
1 tsp. vanilla
1 egg
3 tbsp. milk

Preheat oven to 350ºF

Cream the butter, shortening, and sugar. Add the lemon juice and vanilla. Add the egg and milk. Sift the flour, baking soda, salt, and cream of tartar together. Add to the creamed mixture and mix well. Roll into 1 inch balls and roll the balls in white or colored sugar. Arrange the balls 1 1/2 inches apart on ungreased cookie sheets. Flatten the balls gently with the bottom of a small glass. Bake 8-10 minutes or until a very light golden brown. Makes 3 dozen cookies.
