Shrimp Hollandaise (Camarones a la Holandesa) Recipe

Ingredients:  
Ingredients:  
1 lb shrimp
1 T butter or margarine
1 T oil
1 onion minced
1 shot of cognac
1 cup of white wine
1 small can of mushrooms
salt & pepper to taste

Hollandaise Sauce
3 egg yolks
1 tsp dijon mustard
1 T lemon juice
1 cup butter or margarine, melted and hot

Directions:
Directions:
Melt butter and add oil in a frying pan.
Add onion and cook over medium heat until soft. Add shrimp, cognac, wine, mushrooms, salt and pepper.
Cook, stirring over high heat until liquid is nearly gone.
Arrange in a plater and cover with hollandaise sauce.
Garnish with lemoh rings.


Hollandaise Sauce
Combine egg yolks, mustard and lemon juice in the top of a double boiler, whisk constantly,
Add butter or margarine slowly.
Continlie to cook beating until sauce thickens
