1 1/2# ground beef
1/2 c. chopped onion
1 envelope Taco seasoning
1/3 c. water
8 oz tomato sauce
2 eggs
16 oz can red kidney beans
about 2 c. crushed tortilla chips
1 1/2 c. Monterey Jack cheese

Topping:
1 c. shredded lettuce
1 small tomato
1/4 c. sliced olives
1/2 c. shredded Monterey Jack cheese
Directions:
Directions:
Brown beef with onion. Stir in tomato sauce, water and taco seasoning. Remove fromheat. Beat eggs; stir in milk. Add a small amount of tomato sauce to egg mixture, stir constantly. Return all to skillet. Stir in kidney beans, cheese, and crushed chips.

Turn into greased 9 x 13. Bake at 350º fir 30 minutes. Top with remaining ingredients ending with cheese. Can be served with salsa and sour cream.
