1 1/2 # ground beef
1 small onion diced
16 oz tomato sauce
14.5 oz Italian diced tomatoes
1 c. cottage cheese
8 oz cream cheese
1/4 c. sour cream
1/3 c. diced green pepper, optional
pasta of your choice
Parmesan cheese

Directions:
Directions:
Season beef to taste and brown with onion. Pour in tomato sauce and diced tomato and simmer. Combine remaining ingredients and blend together. Prepare 12-16oz pasta of your choice. Place 1/2 pasta on bottom of greased 9 x 13 dish. Cover with 1/2 cheese mixture, 1/2 meat mixture, repeat and top with Parmesan cheese. Bake at 350º for about 30 minutes until heated through.

I make this recipe for lasagna using raw lasagna noodles and a large 26 oz tomato sauce (Garlic & Herb variety) in place of the 16 oz in the above recipe. Prepare the night before and bake lasagna (the next day) as usual until thoroughly heated though approximately 45 - 60 minutes. This also can be frozen and baked the day it is needed. Either thaw in refrigerator the day before or allow much more time for baking!
