1 chicken cut into 8 pieces (good size)
1/2 tsp salt
1 tsp freshly ground pepper
3/4 cup extra-virgin olive oil
5 tsp herbs de Provence
1 tsp dried marjoram,
1 tsp oregano
1 tspsummer savory
2 tsp dried thyme
40 whole garlic cloves, unpeeled
1 loaf of French bread sliced and toasted

Directions:
Directions:
Preheat the oven to 375 F.
Season chicken pieces with salt and 1/2 tsp of pepper.
In a large flame-proof casserole, heat 2 T olive oil over moderately high heat.
Add chicken in batches and brown evenly, about 3 minutes on each side.
Remove the casserole from heat.
Return all of chicken to the casserole
Add herbs de Provence, garlic cloves, remaining 1/2 cup plus 2 T olive oil and 1/2 tsp pepper.
Toss to coat well.
Place aluminum foil over the casserole and cover with the lid for 1 hour and 10 minutes.
Serve chicken with garlic cloves, to be spread onto the toasted French bread.

HELPFUL HINT: Place whole casserole on cookie sheet when baking to prevent any oil from leaking.
Also, use a big enough pan.
