2 - 2 1/2 T butter (or margarine)
1 med. onion chopped (roughly 1 1/4 cup)
1 large green pepper chopped
2 T flour
1 chicken bouillon, or broth packet
4 cup milk
1 1/2 - 1 3/4 cups grated cheddar cheese
1 T paprika
a couple of dashes garlic salt
1 tsp red cayenne pepper

(This is how you make the soup cheek-sweating and nose-running! Add red pepper to your liking. You may substitute black pepper if you don't like hot 'n spicy foods.)

Directions:
Directions:
Melt butter in a pot, add the onion and pepper, and cook slowly until limp.
Stir in the flour and continue to cook for roughly 3 minutes, stirring.
Slowly add the chicken broth packet and milk, and heat to the boiling point, stirring frequently.
Stir in the cheese and paprika and stir until the cheese has melted.
Lower heat and add garlic salt and red pepper, stirring.

You may want to do the sole taste test at this time!

This soup has a festive color and looks lusciously appetizing for a dinner party - garnish with a sprig of parsley.
