1 c. fresh green beans, cut
1 1/2 c. fresh zucchini, sliced
1 c. carrots, sliced
2 c. onion, coarsely chopped
1 c. celery, diced
1/4 c. fresh parsley, minced
2 c. cabbage, coarsely chopped
2 c. fresh baby spinach
2 cloves garlic, minced
2 c. chopped tomatoes or 1 can (14.5 oz.)
diced tomatoes, drained
1 1/2 pounds ground meat (beef, turkey, chicken)
16 oz. can kidney beans
15 oz. can garbanzo beans
15 oz. can tomato sauce
4 oz. pasta shells
5 cups beef broth
1 c. grated parmesan
1/2 tsp. salt
1/2 tsp. ground pepper
2 tbsp. fresh basil, chopped
1 tbsp. fresh oregano, chopped
1 tbsp. olive oil

Directions:
Directions:
In a stockpot, saute the onions, celery, parsley and garlic in oil until tender. Stir in the broth, tomatoes, tomato sauce, cabbage, carrots, basil, oregano, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 1 hour.

In a large skillet, cook ground meat over medium heat until no longer pink; drain and set aside. Stir into soup along with the zucchini, green beans, canned beans and pasta. Cover and simmer for 15-20 minutes or until vegetables and pasta are tender. Stir in baby spinach and cook 5 more minutes. Top each serving with parmesan cheese.

I love Minestrone soup and have searched for years to find the "perfect" recipe. I found several recipes and wasn't satisfied...so, I combined several into the above recipe. It is written as I saw fit...so, good luck! You will need to "eyeball" it as it cooks to decide if you want to add more liquid or have a more "thick" soup. It is worth all the chopping!!
