Ingredients: 3 tsp. olive oil 1 onion, thinly sliced 8 oz. mushrooms, sliced 1 bag (5 to 6 oz.) baby spinach Red and /or green peppers, chopped left over veggies, drained [clean out the fridge] 6 T. whole milk 2 tsp. cornstarch 6 T. half & half 6 to 8 eggs or "Egg Beaters" 1/2 tsp. pepper 1/4 c. Parmesan cheese, grated approx. 1 lb. grated Cheese [ Mexican, Mozzarella or your favorite]

Directions:1. Preheat oven 425º. Grease 8x8 glass baking pan.
2. Heat oil in heavy skillet. Add onions. Caramelized by cooking over low heat until sweet and deeply colored (20-30 mins). Scatter onions in bottom of baking pan. Cook mushrooms approx. 2 mins. Scatter on top of onions. Stir in spinach, cook about 1 min or until wilted, stirring constantly. Scatter over previous veggies. Scatter any other left over veggies you like. Sprinkle grated cheese over veggies enough to cover.
3. Dissolve cornstarch in 2 T. milk in large glass measuring cup. Whisk in remaining 5 T. milk, half & half, pepper, Parmesan cheese and eggs.
4. Pour egg mixture carefully over veggies & cheese.
5. Bake 20 mins or until knife inserted in center comes out clean. |

Notes: Recipe can be doubled, then bake in 13x9" glass pan. Cooking time may be more then doubled. Knife should come out clean.
