3 tsp. olive oil
1 onion, thinly sliced
8 oz. mushrooms, sliced
1 bag (5 to 6 oz.) baby spinach
Red and /or green peppers, chopped
left over veggies, drained [clean out the fridge]
6 T. whole milk
2 tsp. cornstarch
6 T. half & half
6 to 8 eggs or "Egg Beaters"
1/2 tsp. pepper
1/4 c. Parmesan cheese, grated
approx. 1 lb. grated Cheese [ Mexican, Mozzarella or your favorite]

1. Preheat oven 425º. Grease 8x8 glass baking pan.

2. Heat oil in heavy skillet. Add onions. Caramelized by cooking over low heat until sweet and deeply colored (20-30 mins). Scatter onions in bottom of baking pan. Cook mushrooms approx. 2 mins. Scatter on top of onions. Stir in spinach, cook about 1 min or until wilted, stirring constantly. Scatter over previous veggies. Scatter any other left over veggies you like. Sprinkle grated cheese over veggies enough to cover.

3. Dissolve cornstarch in 2 T. milk in large glass measuring cup. Whisk in remaining 5 T. milk, half & half, pepper, Parmesan cheese and eggs.

4. Pour egg mixture carefully over veggies & cheese.

5. Bake 20 mins or until knife inserted in center comes out clean.

Recipe can be doubled, then bake in 13x9" glass pan. Cooking time may be more then doubled. Knife should come out clean.
