1/2 lb. firm ripe yellow tomatoes cut in wedges
1/2 medium serrano chili, very thinly sliced
3/4 cup chopped mango
2 tbsp. finely chopped red onion
1 1/2 tsp. minced ginger
1 tbsp. olive oil
1 tsp. cracked coriander seeds
1 tbsp. packed light brown sugar
2 tbsp. unseasoned rice vinegar
1/2 tsp. salt
1 green onion

Combine tomatoes, chile, mango, red onion and ginger.

Warm oil in saucepan over medium heat. Add coriander Cook until medium brown. Remove from heat. Stir in sugar, vinegar and salt. Pour over tomato mixture. Let stand 30 to 60 minutes Mix in green onion.
