1 1/2 C finely diced tomatoes- recommend Roma
1 T minced fresh basil
2 tsp minced garlic
2 tsp diced marinated sun dried tomatoes (optional)
2 tsp extra virgin olive oil
1 tsp balsamic vinegar
1/4 tsp salt
Parsley flakes
Parmesan and/or Mozzarella cheese

Ciabatta or Italian bread

Directions:
Slice bread and pre-toast on both sides.
Take first 7 ingredients and mix together. Let set for 10-15 minutes for flavors to blend.
Top each slice of bread with 1 heaping T of tomato mixture.
Sprinkle cheese/parsley mixture on top.
Heat under broiler for 1-2 min till cheese starts to melt.
