4 medium unpeeled zucchini
3 eggs, beaten
1/4 C flour
1/4 tsp garlic powder
1 tsp salt
1 onion grated or 1 T dried minced onion
1 C chicken broth
2 T soy sauce
1 T cornstarch
Cooked rice

Directions:
Directions:
Grate zucchini coarsely.
Mix into zucchini the eggs, flour, garlic powder, salt and onion.
Fry by tablespoonfuls in hot oiled skillet turning once when golden brown.
Combine chicken broth, soy sauce ad cornstarch in saucepan and stir over low heat until thickened.
Arrange zucchini fritters on plate on top of rice and then pour sauce over zucchini and rice.
Arrange on platter and top with sauce.
