4 cups thinly sliced green cabbage
3 medium green apples, cored and cubed (about 3 cups)
1/3 cup chopped green onions
1/4 cup canola oil
1/4 cup cider vinegar
1 Tbsp. dijon mustard
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. ground black pepper

In a large bowl, combine the cabbage, apples, and green onions. For the dressing, in a small bowl, whisk together oil, vinegar, mustard, sugar, salt, and pepper until well combined. Add dressing to salad; toss to coat. Refrigerate, covered, for 2-24 hours.
