16.9-oz. box of frozen potato and cheddar pierogi
1 Tbsp. olive oil
1 small yellow onion, cut into rings
1 crisp apple, cut into pieces
1/4 small head green cabbage, shredded
1 Tbsp. apple cider vinegar
1/2 tsp. Kosher salt
1/2 tsp. pepper
1/3 cup sour cream

Directions:

Cook the pierogi according to directions on box. Heat oil in a medium skillet over medium-high heat. Add onion and cook, stirring occasionally, until soft, about 6 min. Add apple and cook 1 min. Add cabbage, vinegar, 1/2 tsp. salt, and 1/4 tsp. pepper and cook, stirring, until cabbage is slightly wilted but still crunchy, about 3 min. Divide cabbage and apple among individual plates. Serve with pierogi and sour cream on the side.
