Tempura Batter
1c.all purpose flour
1c.cornstarch
1T.sugar
16oz.club soda
3T Cajun seasoning
peanut oil for frying
kosher salt for seasoning
2lb.fresh okra stems removed and cut lengthwise
1c.all purpose flour(roll okra in)
Scallion Dipping Sauce
16oz.sour cream
1c.chopped scallions
1/4c.honey
1t.cayenne pepper
1t.salt

Directions:
Whisk Tempura ingredients together and let chill.
Heat peanut oil in deep fryer or Dutch oven to 375
In shallow pie plate add 1c.flour &1Tcajun seasoning.Mix well
Season okra with 2T Cajun seasoning.Dip okra in seasoned flour & then the Tempura batter &place in oil,1 at a time until golden brown about 4 minutes.Remove and drain on a paper towel.Season with salt.Serve with scallion dipping sauce
