4 6 oz salmon fillets, skinless
2 tsp Freshly chopped parsley leaves
1/2 Vidalia onion, diced
2 eggs
1/2 c. panko bread crumbs
1/2 tsp cracked black pepper
1 tsp kosher salt

DILL MAYONNAISE
1/2 c. mayonnaise
1/2 lemon, juiced
2 T freshly chopped dill leaves
Pinch cayenne pepper
1/2 tsp. salt
1/2 tsp. cracked pepper
1 lemon, zested
4 T. Dill Mayonnaise, recipe follows

For Mayonnaise:
Combine all ingredients in a small bowl and set aside

For Burgers:
Process the fillets in food processor
In medium bowl, combine ground salmon, parsley, onions, eggs, panko, black pepper, salt, lemon zest and Dill Mayonnaise. Grill over medium heat 3 minutes, turn. Do this for a total of 4 times

Serve on buns with Mayonnaise
