1 pkg. chicken breasts, cooked and cooled (about 3)
1 orange, zest and juice
1/4 cup craisins
1/4 cup toasted pecans, chopped
1/4 cup fresh parsley, chopped
2 stalks celery, finely chopped
1/2 - 3/4 cup mayonnaise (I only use Hellman's)
Sea salt and freshly ground pepper to taste

Place chicken in food processor and pulse to chop in small pieces. Combine in a large bowl with all other ingredients except mayonnaise, orange juice, salt and pepper. In a separate small bowl, make a dressing of the orange juice, zest and mayonnaise, and about 1 tsp. of salt and 1/4 tsp. pepper. Add about 3/4 of it to chicken mixture, adding more if too dry --it depends on the amount of chicken. Taste to correct flavors.

My friend Anne started The Good Cup, a local coffee shop, and I worked in the kitchen a couple of days a week to help out. When I told her she needed a chicken salad on her menu for all of her chicken salad-loving Southern friends, she challenged me to create one for her. This is what I came up with, and I've been pleased over the years whenever it's been mentioned in the food section of the Tennessean as being "bracing and fruit-filled", or commented on by friends as being a favorite.
