4 cups flour
3/4 cups shortening
1 tsp salt
3/4 to 1 cup ice water

Directions:
Make a well of flour and put in shortening, salt, ice water. Mix the dough with a fork until it begins to form a ball. Work just enough flour into the dough so you can handle it. Put it out on the counter or where ever you want to roll it out and work more flour into the dough, but do not let it be too elastic. The secret to good pie dough is not to handle it too much (this makes enough for a two crust pie). There may be flour left over. Double this for a big cobbler using about 6 cups flour and double the rest. If I have too much dough, I form it into a ball and freeze it for later.
