6 1/2 Green Peppers
1 Onion chopped
1 lb ground hamburger
2 cans stewed tomatoes
Tomato Juice
Velveta Cheese (optional)
3 cups uncooked rice

Directions:
Directions:
In 3 qt pan cook hamburger,1/2 green pepper chopped,and chopped onion until hamburger is fully cooked. Drain.
At same time prepare 3 cups rice according to package directions.
Combine the rice with the hamburger mixture, add the two cans stewed tomatoes and proximately 1/2 a can of tomato juice.
Precook the 6 green peppers (cleaned and cored) in boiling water - boil for proximately 5 minutes. Stuff the peppers and place in greased casserole dish. Pour a little of the left over tomato juice in bottom of the dish. Put small piece of velveta cheese on top of each pepper. Cover with foil and back for 30 minutes. Serve with left over Spanish rice mixture.
