1 can cream corn
1 c. yellow corn meal
1/2 c. oil
1 c. milk
1/2 tsp. baking soda
1 T. salt
1 large onion, chopped
2 Jalapeño pepper, chopped (fresh or from jar)
2 eggs
6 oz. grated cheese

Directions:

Mix all ingredients together and pour into prepared muffin cups. Bake at 350º for 15 minutes.
