1 egg
1/2 c. milk
1/4 c. vegetable oil
1 1/2 c. sifted flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1 c. blueberries

Directions:
Directions:
Heat oven to 400º. Grease bottom of muffin cups.
Beat egg whites with fork. Stir in milk and oil. Blend
dry ingredients; stir in just until flour is moistened.(Batter should be lumpy). Blend in carefully 1 cup well drained fresh or 3/4 cup canned blueberries. Fill muffin cups 2/3 full. Bake 20 to 25 minutes.

Sometimes I use the paper lined cups that I grease on the bottom. Also I sometimes add a bit of sugar on top before baking. My oven has them done in 15 minutes.
