4 1-1/4" thick lamb loin chops
3 large cloves garlic
1 T fresh rosemary leaves
2 T fresh thyme leaves
3 T fresh parsley leaves
1 t kosher salt
1/4 t freshly ground black pepper
1/4 c extra virgin olive oil

Directions:
Directions:
Chop the garlic finely. Chop the herbs finely together and then combine with the garlic in a shallow glass bowl or other container large enough to hold all of the lamb chops in one layer. Add the salt, pepper and olive oil and mix together. Add the lamb chops, turning to coat them on all sides. Allow the chops to marinate at least an hour at room temperature, or cover and refrigerate for up to 24 hours. Let the chops come back to room temperature before cooking.
Heat a grill pan over high heat until hot, then add the chops and sear for 1 1/2-2 minutes. Reduce the heat to medium and cook 1-2 minutes more for rare, 2-3 minutes for medium-rare and 3-4 minutes for medium, turning 1-3 times as the chops cook. Internal temperatures should be 120- 130º for rare, 130-135º for medium-rare and 135-150ºF for medium. Remove from the heat and let rest 5 minutes before serving.
