1 (6 1/2 oz.) jar marinated artichoke hearts, drained and chopped
2 tbsp. onion, chopped
1 tsp. butter or margarine, softened
1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
1/2 cup Parmesan cheese, grated
1 cups Colby/Monterey Jack cheese, shredded
1/4 cup milk
3/4 tsp. Creole seasoning; heat
1 cup Italian blend, dry crumbs
1/4 cup sour cream

Directions:
Directions:
In a skillet, saute artichokes and onion in butter until onion is tender. Stir in spinach and Parmesan cheese; cook over slow heat until spinach is heated through. Add Colby/Monterey Jack cheese, milk and Creole seasoning; heat until cheese is melted. Serve immediately with vegetables, tortilla chips or crackers.
