4 1/2 cups cubed cooked chicken breast, 4 1/2 cups cubed or julienned jicama, 2 tbsp lemon juice, 1/3 cup orange juice, 1/4 cup honey, 1 garlic clove, minced, 1/4 cup oil, 1/2 tsp black pepper, 1/2 tsp salt, 2 11 oz cans mandarin oranges, drained, 2 to 4 tbsp snipped fresh cilantro leaves.

1, Combine Chicken and jicama in bowl. Set aside. 2. Combine the lemon juice, orange juice, honey, garlic, oil, pepper and salt. Mix well and add to chicken and jicama. 3 Chill mixture several hrs. or overnight. Before serving, add oranges and cilantro.
