1/2 cup vegetable oil - 1 cup flour - 1/2 cup chopped green onion - 1 medium yellow onion chopped, 2 cups celery chopped , l cup chopped red, yellow, or green bell pepper or mix - 4 qts chicken broth, 3 cups diced tomatoes, canned or fresh. 2 cups fresh or frozen cut okra, 5 cups cooked rice, 3 cups cubed cooked chicken, Salt and pepper to taste.

1. Make a roux by heating the oil in a large stock pot. Blend in flour and cook over low heat, stirring constantly, until brown. about l5 minutes. The darker the roux the better the flavor. Be careful that it does not burn. 2. When the roux is medium brown. add the green onions, yellow onion, celery, and pepper. Cook the roux with vegetables for about 5 minutes or more. 3. Add the remaining ingredients. Bring to a boil, reduce heat and simmer 20 minutes longer. Taste for salt and pepper/
