4 small zucchini
1 lb lean ground beef
1 small onion, chopped
1 clove garlic, minced
1 tsp oregano
1 10 oz can tomato soup
1/4 c grated Parmesan cheese

Directions:
Directions:
Preheat oven to 375º. Cut off stem ends of zucchini & cut in half lengthwise. Scoop out seeds & pulp (save), leaving a 1/4" outer shell. Brown ground beef, onion, garlic, and oregano. Drain excess fat. Add chopped zucchini pulp, Parmesan cheese, and 1/4 of the soup, undiluted. Arrange zucchini shells in baking pan & spoon in mixture to fill. Spoon remaining soup on top & sprinkle with Parmesan cheese. Bake 35-40 minutes until zucchini are tender.

I have increased this recipe just by adding more zucchinis. The added pulp decreases the amount of meat in each shell, but still tastes good. You may need a bit more soup to top with.
