Sauce Ingredients: 1 can cream of chicken soup, 1 pkg green onion dry dip mix, 1 cup evaporated milk, 1/4 lb velveeta cheese, 1 can pimentos, 1 small can chopped green chilies (I use Large)................Enchiladas Ingredients: 12 corn tortillas, 1 lb longhorn cheese, grated, 1 lb ground beef, 1 cup onion, chopped.

Directions: Brown meat, Add grated cheese and chopped onions; toss until mixed. Set aside. Place ingredients for sauce in a double boiler and cook over low heat until cheese melts. Put beef mixture (2 -3 tbsps) in tortilla and roll to make enchilada. Place in 9 x12 pan. When enchiladas are formed, pour sauce over top. Bake 30 minutes in 350 degree oven.

For Papa and I, I make 2 Pans 8x8 etc. Eat one freeze one. Put tortillas in microwave for few seconds to make pliable. Few at a time. This recipe came from a restaurant in Comstock Tx. Mema , Papaw, Papa and Jim ( when he was l2 or l4) stopped there and ate while they were fishing at Lake Amastad. Your Dad ate 2 orders. In later years the owner gave Mema the recipe. The restaurant is closed now. Glad we got it.
