4 slices bacon, chopped
1 large onion, chopped
1 carrot, chopped
1 stalk of celery, chopped
1/2 cup of water
2 cups of peeled, diced potatoes
1/2 lb. fish fillets - cut into small cubes (almost any fish or combination of fish may be used in this hearty main dish chowder)
3 cups of milk
1 - 14 oz. can of cream corn
1 - 73/4 oz. can of salmon
salt & pepper

Directions:
In a large saucepan, cook bacon until nearly crisp. Add onion, carrot & celery and cook until soft. Add water and potatoes; cover & simmer until potatoes are slightly softened. Add fish, cover & simmer about 5 minutes or just until fish flakes with a fork. Add milk, cream corn & salmon. Season with salt & pepper to taste. Heat through but do not boil.
To thin the chowder, just add more milk.
