2 tbsp active dry yeast
1/3 cup very warm water
1/2 cup butter
1 cup milk
4 1/4 to 4 3/4 cup unsifted unbleached flour, divided
1/3 cup sugar
2 tsp salt
3 large eggs, room temperature

Melted butter

Directions:
1. Dissolve yeast in warm water. Set aside. In small saucepan over low heat, melt butter, in milk.
2. In large bowl, combine 2 1/4 cups flour, sugar, salt, eggs,dissolved yeast and warm milk-butter mixture. Beat with wooden spoon for about 3 minutes. (This step can be done in a food processor using a plastic blade)
3. Add remaining flour by hand. The dough will be soft and sticky. Place in an oiled bowl and cover with plastic wrap. Refrigerate several hrs. or overnight.
4. Turn dough onto generously floured surface Pat dough to 1/2" thickness. Cut with 2" round cutter. Place on ungreased cookie sheet about 1" apart. Brush generously with melted butter.
5. Allow rolls to rise at room temperature about 45 minutes to 1 hour. Bake in pre-heated 400º oven for l0 minutes
