6 cups large diced yellow squash and zucchini, vegetable oil, 1 large onion, chopped, 4 Tbls butter, 1/2 cup sour cream, 1 tsp House Seasoning, (see recipe) 1 cup grated cheddar cheese, 1 cup crushed Ritz crackers

Preheat oven 350º Saute' the squash in a little vegetable oil over medium-low heat until it has completely broken down, about 15 - 20 minutes. Line colander with a clan tea or paper towel. Place the cooked squash in the lined colander. Drain and then squeeze excess moisture form squash. Set aside. In a medium skillet, saute the onion in butter for 5 minutes. Remove from pan, then mix all ingredients together except cracker crumbs. Pour mixture into a buttered casserole dish and top with crackers.Bake for 25 - 20 minutes.

This makes a lot. I usually half if for my family of 4 but if you family like squash cook according to recipe.
