1 T olive oil
2 lbs skinless, boneless chicken thighs, coarsely chopped
2 c chopped onion
1 c chopped red bell pepper
1/2 t ground ginger
1/2 t ground cinnamon
1/4 t saffron threads, crushed
4 garlic cloves, minced
1 c chicken, broth
1 c orange juice
3/4 t salt
1/4 t black pepper
1 1/2 c chopped orange (about 2 oranges)
1/3 c chopped parsley
1/3 c cilantro
1/4 c sliced pitted Kalamazoo olives
3 T chopped lemon sections (about 1 lemon)

5 c cooked couches

Directions:
Directions:
Heat oil in Dutch oven over medium heat. Add chicken and next 6 ingredients.

Stir in broth, juice, salt and pepper. Bring to a boil,cover, reduce heat then simmer for 30 min.

**Can be prepared ahead up to this point

Add remaining ingredients except couscous. Heat.

Serve over couscous.

A tangine is shallow pan with a cone shaped topper used in countries like Morocco. This type of cooking creates a type of convection cooking. A good Dutch oven, preferably porcelain covered cast iron, will give the same results.
