1 lb. good quality sausage
2 cans Pillsbury biscuits
1 pkg. (8 oz.) cream cheese, softened
1 tablespoon chives or parsley, if desired

Preheat oven according to Pillsbury biscuit directions.

Brown sausage in a non-stick skillet over medium-high heat. Drain well and return to stove. Reduce heat to low, add cream cheese and stir until thoroughly mixed. Remove from heat. Stir in spice, if using.

Open and separate the biscuits, then cut in half using kitchen shears. Carefully spread/pull the biscuits out a little, to form a "pocket".

Place a tablespoon of the mixture in the pocket, then roll and pinch to seal. Place onto ungreased baking sheet with pinched/sealed side down. Bake according to package directions, about 8 minutes until golden brown. Allow to cool slightly before eating --- filling will be quite hot.

Can be enjoyed not or cold. Reheat wrapped in foil in 300º oven for about 6 minutes.
