1/4 cup dried black-eyed peas
1/4 cup dried Navy beans
1/4 cup dried kidney beans
1/4 cup dried baby lima beans
1/4 cup dried lentils
1/4 cup dried split peas
1/4 cup dried Great Northern beans
1/4 cup dried pinto beans

2 Tbsp. salt
2 quarts of water
1/2 to 1 cup cubed ham
1 onion, sliced
1 (18-1/2 oz.) can tomatoes
1 clove garlic
Juice of 1 lemon
Salt and pepper to taste

Empty all the beans into a bowl, mix well, wash and drain. Put beans into a soup pot, cover with water, and add 2 Tbsp. salt. Cover and soak in the refrigerator overnight. Drain. Place beans back into the soup pot and add 2 quarts of water, cubed ham, and 1 large sliced onion. Simmer for 2-1/2 to 3 hours, adding hot water, if necessary. Then add 1 large can (18-1/2 oz.) tomatoes, 1 clove garlic (minced) and the juice of 1 lemon. Salt and pepper to taste. Simmer until ready to serve.

The dry ingredients for this soup make a pretty gift presentation when layered by colors in a Mason jar. Use a round of colorful fabric under the "O" part of the lid and attach a copy of the recipe for a festive gift.
