4 large Russet potatoes
2 Tbsp. butter
1 Tbsp. flour
1 tsp. minced onion
1 cup milk
Salt and pepper
1 cup Fontina cheese, grated

Directions:
Directions:
Boil the potatoes until you can pierce them with a fork. Cool and slice thinly. Melt butter in a saucepan. Whisk flour into melted butter and cook, stirring constantly, over medium heat until roux thickens. (It should coat the back of a spoon.) Season to taste. In a greased 9" x 9" baking dish, layer the potatoes, salt and pepper, onion, the sauce, and the cheese. Continue layering until all ingredients are used. End with a cheese layer. Bake for approximately 40 minutes in a preheated 375º oven. For a variation, add a layer of thinly sliced ham and substitute other kinds of cheeses.

In the Miller household, this dish was known as "Ma-Toe-Limpa." Nana Andy injured her foot one day while cooking scalloped potatoes and the rest is history.
