5 Tbsp. olive oil, divided
1-1/2 tsp kosher salt
1/2 tsp. pepper
1 tsp. lemon zest
1 Tbsp. lemon juice
1/3 cup Parmesan cheese, grated
3 Tbsp. pine nuts, toasted (optional)

Directions:
Directions:
Preheat oven to 425º. Cut broccoli florets from the stalks, leaving only an inch of stalk attached. Discard stalks. Cut broccoli into smaller pieces, making about 6 cups.

Place broccoli on a sheet pan in a single layer. Drizzle with 4 Tbsp. olive oil. Sprinkle with salt and pepper; toss to coat. Roast for 20 - 25 minutes, until slightly browned. Remove from oven and top with 1 Tbsp. olive oil, lemon zest, pine nuts (if desired), and Parmesan.
