1 ½ T butter
2 boneless skinless chicken breast halves
Salt and pepper to taste
½ c dry white wine
6 oz. chicken stock
Juice of 1 lemon (about 3 T)
Few strips roasted red pepper
2 thin slices of fresh mozzarella

Directions:
Directions:
In a skillet over high heat, melt butter and cook until golden. Add chicken, wine, salt and pepper to taste. As you cook, keep turning chicken to cook evenly. Continue cooking, reducing the wine until gone. Add stock and lemon juice and cook chicken until done. Cover tops of chicken with strips of red pepper, add cheese, and cover skillet with lid. Reduce heat to medium. Warm until cheese begins to melt. Serve immediately with pan juices.
