4 strips bacon
1 large sweet onion, thinly sliced
6 oz. dry macaroni
8 oz. mozzarella cheese, shredded (2 cups)
2 to 4 oz. blue cheese, crumbled
1 cup ½ and ½ or light cream
1/8 tsp. pepper

Directions:
Directions:
Preheat oven to 350 degrees. In a large skillet, cook bacon over medium heat until crisp. Drain bacon and crumble. Reserve drippings in skillet.

Cook onion in drippings for 5 to 8 minutes or until onion is tender and golden brown. Set aside.

Cook macaroni according to package directions. Drain and place in a 1 ½ quart casserole. Add crumbled bacon, onions, 1 ½ c. mozzarella, blue cheese, ½ and ½ , and pepper. Toss gently to combine.

Bake, uncovered, for 20 minutes. Stir gently. Top with remaining mozzarella. Bake 10 minutes or until brown and bubbly. Let stand 10 minutes before serving.
