1 egg white
6 tbs sugar, divided
3 tbs Minute Tapioca
2 cups milk
1 egg yolk
1 tsp vanilla

Directions:
Directions:
Beat egg white in medium bowl with electric mixer on high speed until foamy. Gradually add 3 tbs sugar, beating until soft peaks form.
Mix tapioca, remaining 3 tbs sugar, milk and egg yolk in medium saucepan. Let stand 5 minutes.
Cook on med. heat stirring constantly, until mixture comes to a full boil. Remove from heat. Quickly fold in egg white mixture until well blended, stir in vanilla. Cool 20 min, stir. Serve warm or chilled.

Grandma Marie Rollins used to make this and us kids loved it, it was the best! She used the Kraft Minute Tapioca recipe that is still listed on the box

Tapioca can be used to thicken pie filling too, or used in cobblers.
