8 eggs
2 tbsp half and half
pinch of salt
1 1/2 tbsp butter or oil

1 15 oz. can chili, no beans
shredded cheddar cheese
Pace Chunky or Albert's Salsa
salt and pepper to taste

Directions:
Directions:
Open chili and cook in saucepan until hot.
Melt butter on low in skillet. Beat eggs with half and half and salt. Add egg mixture to heated skillet; cook on med/low heat. Do not stir until eggs are set and beginning to dry a little on the bottom. Gently, use a large spoon and fold eggs over and stir slightly. Continue to cook until eggs are beginning to get done. Fold over again & stir lightly, being careful not to scorch. When eggs are done, turn off heat and set aside. Salt and pepper to taste. Place serving of 2 scrambled eggs on a plate and pour small amount of chili over individual servings. Top with cheddar cheese. Put salsa in bowl as an accompaniment.
