12 oz. bow tie pasta, cooked according to package instructions and cooled.
1 med. red onion, sliced thin
1 cucumber, sliced thin
1 rib celery, sliced thin
1 pint cherry tomatoes, halved
1/2 cup chopped fresh parsley
1/2 cup black olives, sliced
8 oz. Feta cheese, crumbled
1/2 cup marinated artichoke hearts (optional)

Dressing:
juice of 2 lemons +enough water to make 1/4 cup
1/2 cup olive oil
1 tsp. lemon pepper
1 tsp. Italian herbs
1/2 tsp. salt

Directions:
Directions:
Mix dressing ingredients and mix well.

Combine other ingredients in a large bowl, pour dressing over pasta mixture and mix well. Chill before serving.
