Meatloaf:
3 cups finely chopped onion
3-6 tbsp minced garlic
1 package celery, finely sliced
1 package carrots minced in food processor
1 cup finely chopped scallion
2 tbsp. butter
EVOO
2 tsp. salt
1 1/2 tsp. freshly ground black pepper
2 tsp. Worcestershire sauce
2/3 cup ketchup
3 #'s ground chuck
3 #'s ground pork
1 cup fresh bread crumbs
1 cup oatmeal
4 large eggs, beaten lightly
1 cup minced fresh parsley

Sauce:
Ketchup
Brown Sugar

Stuffed Peppers:
6 - 8 Red Bell Peppers

Directions:

Preheat oven to 350º.

In a large heavy skillet cook onion, garlic, celery, carrot, and scallion in butter and EVOO over moderate heat, stirring about 5 minutes. Cover the pan and cook for about 5 minutes more.

Stir in salt, pepper, Worcestershire, and 1/3 cup of ketchup. Cook and stir about a minute more or until everything looks incorporated. Everything should be pretty tender.

In a large bowl combine very well the rest of the meat and vegetable mixture. Add bread crumbs, oatmeal, eggs and parsley.

If the mixture feels like it needs it, add more oatmeal or breadcrumbs.

Mix the ketchup and brown sugar and warm in the microwave.

If making meatloaf, put in meatloaf pan and top with the ketchup/brown sugar mixture. Cook for about an hour or until meat thermometer registers 155º.

Serve with extra sauce.

If making peppers:
Clean out the bell peppers and blanch in boiling water for about 3 - 5 minutes.

Fill peppers with meat mixture and brush with the sauce.

Bake in a 9 x 13" dish with about 1 1/2" water in bottom of pan.

Bake with the same directions.

Freeze leftover mixture and use at a later date.
