1 Prime Rib (have bones cut from rib, then tied back on!)
Olive oil
2 cups crushed garlic
coarse kosher salt
Meat thermometer

Directions:
Directions:
Rub olive oil over and around roast. Rub with seasoning; seasoned salt, pepper and grilling spice. Cover with crushed garlic. (Approximately 2 cups per 12 lb. roast.) Cake outside with coarse kosher salt. (Mix with olive oil to make paste.) Set roast on rack in pan. Insert thermometer to center of roast. Roast for 1 hour on med-hot. (350-400º on BBQ thermometer) Turn BBQ down to 325º. Estimated cooking time, 12-14 min. per lb. Watch roast thermometer. Pull off BBQ when internal temp reaches 115-125º. Cover with foil. Let set 15-25 minutes. Watch internal thermometer. Med-Med/rare= 140-150º. Uncover. Chip off salt coating. Remove bones. Slice and serve.
