3 lb. stewing hen
3 Tbsp. salt
1/2 c. melted butter
1 cup flour
1/2 c. chopped pimento
1/2 c. blanched peppers
1 tsp. MSG
1/2 tsp. pepper
few drops yellow food coloring

Croutons:
1 loaf sourdough bread
garlic salt
vegetable oil (to deep fry)

Directions:
Directions:
Boil the stewing hen in 16 cups water and the 3 T. salt. Strain off 8 cups of the stock. Make roux of 1/2 cup of melted butter and 1 cup of flour. Add to stock and simmer 15 minutes. Add the remaining ingredients plus 1/2 cup of chopped chicken. Stir constantly.
To make the croutons, cube the sourdough bread. Deep fry, then, spread cubes out on a cookie sheet. Sprinkle with garlic salt. Bake at 250º for 1/2 to 3/4 hour. Lay out on paper towels
