5 lbs "B" size red potatoes
10 hard boiled eggs (chopped)
3-4 stalks celery (chopped)
1 small onion (chopped)
Mayonnaise
pepper
salt

Directions:
Directions:
Boil eggs, then peel and chill. Boil potatoes with skin on, until a fork or knife can pierce through (about 45 minutes). The skin is usually just starting to break open. Drain. Peel potatoes and chop (chunky) once they are cool enough to handle. Peel and chop eggs. (I only use about 1/2 of the yolks and all of the whites). Mix potatoes, eggs, celery, onions, dash of salt & pepper. Chill for about 2 hours. Add mayonnaise and refrigerate overnight.
